This is probably a silly question, or at least I hope it is. I am looking at bringing back into California a seven currently registered elsewhere. Since it used to have a CA registration through SB-100 (granted in 2006), will it be as simple as registering a normal car in CA?

Probably, ideally if you still have a copy of the old title.
I bought my Seven it in Florida but it was first registered in CA. AAA did not want to touch it for registration because too unusual. Then I went to the DMV, showed a copy of the original title and it got registered right away. However, that was 2003 and who knows how their habits have changed or how much this is dependent on the DMV person.
